BBQ Beef Casserole

Bring on the meat!

There’s nothing better than a casserole for Sunday dinner. So why not a BBQ casserole? Spring is here, after all. And though there may still be snow on the ground up in Vermont-land, here in the sunny southern New England, we’re grillin’!

NOW GET COOKING!

Ingredients

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10 ounce) can whole kernel corn, drained
  • 1/2 cup barbeque sauce
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 3 (8.5 ounce) packages corn bread mix

    Directions

    Preheat the oven to 400 degrees.

    Put ground beef into a large skillet over medium-high heat and cook until evenly browned. Now add the onions, bell peppers, corn, and tomatoes. Cook and stir until vegetables are tender.

    After draining the excess grease, stir in the barbeque sauce. Then spread the beef mixture in an even layer across a large baking dish.

    Prepare the cornbread batter-mix according to the package directions, then spread the batter over the top of the beef mixture.

    Bake for 20-25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

    Then eat up.

      So after all that hype about grillin’ at the top of your post, you don’t even give us a recipe that requires a grill?

      It seems your southern N.E. pride is a little misplaced.
