Pulled BBQ Chicken Sandwiches on the Stove

Here is a great stove top recipe for pulled BBQ sandwiches. It takes about 30 minutes to make and is awesome! NOW GET COOKING!

  • 2 full boneless chicken breasts, split into 4 halves
  • Bottle of Mexican Beer
  • Cup of Chicken Broth
  • 2 tablespoons of Worcestershire sauce
  • 1 medium onion, chopped fine
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 teaspoons liquid smoke
  • 1 8oz can tomato paste
  • 2 tablespoons Montreal steak seasoning
  • 4 tablespoons dark brown sugar
  • 1/3 cup diced sweet pickles (optional)
  • 1/3 Cup diced sour pickles (optional)

In a large, deep skillet, add beer, chicken broth, and Worcestershire sauce. Bing to a boil, then reduce heat to a simmer. Add chicken, and simmer for 10 minutes, turning after 5 minutes.

While chicken is simmering, heat another large skillet with the olive oil, and saute onion and garlic.

In a large bowl, add spices, tomato paste, and brown sugar. Once chicken is done simmering place chicken onto cutting board and cut into large pieces. Then take two forks and shred apart the chicken pieces. Add two ladles of the simmering broth into the bowl of spices, add shredded chicken and mix well. Add more broth if needed/wanted.

Now pour chicken/spice-sauce mixture into the pan with the sauted onions and garlic, add your liquid smoke, and let simmer for another 5 - 8 minutes, adding more broth if you want.

Finally, scoop chicken into hamburger buns and top with diced pickles.

Oh yeah - and drink a beer with it!
