This is a Filipino recipe which I found. I just added the jalapeño for spice and used the chicken wings. You can use pork or whole cut up chicken too. This is great as an appetizer or you can serve it as a meal with steamed Jasmine rice. NOW GET COOKING!
- 3 pounds chicken wings, separated at joints, tips discarded
- 1 cup distilled white vinegar
- 1 teaspoon whole or cracked black peppercorns
- 1 medium onion, chopped
- 2 thai chiles, chopped
- 1/2 cup soy sauce
- 1 whole head garlic, crushed
- 1/4 cup brown sugar
Add the vinegar, soy sauce, peppercorns, onion, brown sugar and jalapeños to a sauce pan and bring to a boil. Place wings in a shallow baking dish, pour marinade over chicken wings. Refrigerate marinating wings for at least 8 hours, or overnight.
Now preheat oven to 375 and place wings (with marinade) in oven and cook for 1 hour. Then drain marinade from baking pan (save about a 1/4 - 1/2 cup) and simmer in a small sauce pan. Set oven to broil and place wings under broiler for about 5 - 8 minutes to “crisp-up” the chicken.
Plate chicken wings and brush some of the simmering sauce over them before serving.
