Fat Tuesday’s Cajun Chicken and Rice
- 2 boneless chicken breasts, chopped into small strips
- 1/2 tablespoon oil
- 1 1/2 cloves garlic, minced
- 2 celery stalks, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 1 cup long grain rice, Uncooked
- 1 1/2 cup chicken broth
- 1 small can diced tomatoes
- 1/2 tablespoon chili powder
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin powder
- 1/4 cup frozen peas
- 1 teaspoon salt
- 3 tablespoons TABASCO pepper sauce
Heat oil in a large skillet over Med-high heat. Add garlic and sauté for about 30 seconds. Add chicken and sauté for 3- 4 minutes. Transfer chicken to a plate, set aside and keep warm.
Add onions, celery, red and green bell pepper and sauté for roughly 3 minutes. Add rice and stir for 1 minute. Add chicken broth, tomatoes (with juice), salt, TABASCO sauce, chili, basil, cayenne, cumin powders and oregano. Bring to a boil, stirring. Cover and simmer for 25 minutes.
Add frozen peas and chicken and cook for another 5 – 7 minutes more.
Once done, serve and enjoy!

I made this for Dawn last night.
Two things:
1) Three tablespoons of Tabasco sauce, as called for in the recipe, is actually HALF A BOTTLE of Tabasco.
2) Dawn’s a wimp and couldn’t handle the heat.
It’s not about being a wimp…it’s about ulcers!
Married for 5 days and you already got ulcers……
