Stumpy’s Steak au Poivre

This week’s recipe is a awesome meal for a dinner for two. No need to go to Morton’s or Abe and Louie’s. Just make yourself a nice steak dinner at home, and the wine you don’t use in the recipe, drink while cooking! - Now get cooking!

Steak au Poivre

  • 2 NY Strip Steaks
  • 2 tablespoons crushed black peppercorns, or more to taste
  • 2 shallots
  • Salt to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup dry red wine
  • 1/2 cup reduced-sodium beef broth

Coarsely crush enough peppercorns to measure 2 tablespoons. Peel and thinly slice the shallots. Salt the steaks lightly. Sprinkle the steaks equally on both sides with the crushed peppercorns, then with the palm of your hand press them into the meat. In a large heavy skillet, heat the olive oil over high heat until very hot, almost smoking. Carefully add the steaks and cook for 3 minutes. Turn and cook for 2 minutes for medium-rare, or longer if desired.

Remove the steaks to a platter and keep warm. Discard any fat in the pan. Add 1 tablespoon of butter to the pan and heat over medium heat until melted. Add the shallots and cook, stirring, until softened. Pour in the wine and cook over medium-high heat until reduced by three quarters. Stir in the beef broth and cook for 2 - 3 minutes. Swirl the remaining 1 tablespoon butter into the sauce, stirring until melted and well combined. Pour sauce over steaks and serve.

Suggested Sides

Broccoli with Garlic Butter & Cashews

  • 1 1/2 lbs. fresh broccoli, cut into bite size pieces
  • 1/3 cup butter
  • 1 tablespoon brown sugar
  • 3 tablespoons soy sauce
  • 2 teaspoons white vinegar
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1/3 cup chopped salted cashews

Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter. While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli.

Mushroom Rice

  • 1 cup uncooked long-grain rice
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 (10.5 ounce) can beef broth
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1/4 cup butter

Preheat oven to 350 degrees. Combine rice, onion soup, beef broth, mushrooms and butter in a casserole dish. Bake in oven for 60 minutes. This one can’t get any easier.

    I can’t vouche for the suggested sides, but this particular Steak au Poivre recipe is a favorite in our house. We’ve made it a bunch of times in the past, and everytime, it’s tasted fantastic. If you haven’t made one of Stumpy’s recipes yet (or haven’t made one in a couple of weeks), you’re not going to want to miss out on this one.

    We made this again on Monday night, and as always, it was great. Dawn did a fantastic job with the smashing of the peppercorns. They weren’t too big and they weren’t too little. Every bite was just bursting. Fantastic stuff.

    We also made the Honey Roasted Potatoes that you suggested in one of your other StumpDay entries, and I gotta tell ya, drizzling the extra au poivre sauce on top of the potatoes just sealed the deal on this meal.

    I said it before and I’ll say it again. If you haven’t made this recipe yet, get to it!

    I suggest you leave a meat-rub related comment to every post Stumpy makes…until he gives up the goods.

    And FYI, Adam, his kitchen is basically done. There’s literally nothing but laziness preventing Stumpy from delivering the rub.

    by posting a recipe every week on this website and at the same time failing to ship product that has been ordered and paid for….I mean…thats amazing….he is opening himself up to this weekly criticism….At this point, grilling season is just about over…. maybe I should be looking for some kind of refund……

    Adam - Its brendans fault, since you still hold that grudge about always being beaten up by him and afraid to come over to my parents house to play with kyle, he told me to not send you any rub until you give him a hug and say all is forgiven…

    My mom (Ms. O) was going to order some sauces from Sir-Stumps-a-lot but I warned her against it. I sang her Adam’s tragic song and I told her that she should watch out for Shawn’s “fraudulent activities”. Last I heard she had Swampscott officials looking into the matter.

    All I’m saying is don’t be surprised if you see a guy with a great big upper body and tiny little legs on America’s Most Wanted.

    Interesting that both my comments got posted, as you can see I only made one change from “torso” to “uppder body”…now you all have seen into my brain when it goes through its tumultous editing process.
